Brinjal & potato masala thovatal

Brinjal and potato masala thovatal is a simple and easy to cook in 45 minutes. Brinjal, potato, onion, sambar powder, coconut mincing, aniseed is the main ingredients of the dish.
INGERDIENTS
200 gram brinjal (3-4 slice)
3 Potato (big cube size)
3 - 4 tsp oil
1 onion(chopped)
1/4 tsp urad
1/4 mustard seed
1 +1/4 Cup of water
2 tsp sambar powder
1 tsp salt
1 cup of coconut(grind)
1/4 aniseed(crush)
3-4 pieces garlic (crush)

Take a pan add oil and heat it.
Add urad, until wait for brownish color.

Add mustard seed, until wait for explosive.

Add chopped onions, until wait for golden brownish color.

Add coconut grind.
Add 1+1/4 cup of water mix well(medium flame)

Add 2 tsp sambar powder and 1 tsp salt mix well( medium)

In all ingredients boiling well.

Add potato mix well(medium flame)

Close the pan in 5 minutes

Add brinjal mix well.

Close the pan boiling in 10 minutes.

Now the veggies cook well.
Add aniseed and garlic (crush) mix well.

Add curry leaves.
Then serve it.
